Many emoji packs used across the fediverse have dashes in the names (as in :hiroi-nodding: rather than :hiroi_nodding:). The Mastodon web client does not support this.
Forks such as Chuckya (TheEssem#9) have added patches to allow this to work properly. Anecdotally, I can also say I've definitely seen emojis with dashes in the names floating around.
The fact that this works in other platforms means users of those platforms happily use emojis with dashes in their names, and then other clients try to view these posts and it breaks.
I can't really find anything saying that emojis with dashes in their names is somehow wrong, other than the fact that support just hasn't been added to upstream mastodon, mastodon-android, etc.
