docs: add CycloneDX 1.6 to README

This especially makes clear, that version 1.6 of the CycloneDX spec is actually supported.

FYI: CycloneDX 1.6 support is not enabled in this tool by any means, it is enabled by one of its dependencies: https://github.com/CycloneDX/cyclonedx-javascript-library

This means: CycloneDX 1.6 is only available in this very tool, if you have the dependency installed in one of the versions that offer support for it.
At the moment, there is no enforcement on a version that supports 1.6 — so your experience might vary.
