Very similar to the updates to the GTN version of this material added in galaxyproject/training-material#4850 - plus I pulled across some of the language simplifications that were made in the GTN tutorial as I think it makes it easier for beginners.

I've made some modifications to leave out some expressions that are more appropriate for a tutorial than for documentation, though in this case the distinction is subtle since part of the docs are written in the form of a tutorial.
