ZEUS-2201: Invoice: handle descriptions/memos returned as arrays

Relates to issue: ZEUS-2201

The bug report above details an issue with lnurlp payments from LNBits causing ZEUS to crash when pulled up through the Activity view. It appears that the description field is returned as an array, which was not handled in our model logic. This PR updates the Invoice model to handle such cases.
