fix(create-remix): default Remix version to CLI version

create-remix uses the latest version of Remix from the npm registry as the default if the -v arg wasn't defined. This PR changes the default Remix version to be the version of create-remix that's being invoked, which most notably means that you can now use tags like this: npm create remix@nightly.
